Egg Tacos With Poblano Pepper Mexican Style

Easy and quick mexican recipe to make your breakfast or dinner something tasty and nutritious.


  • 1/4 piece white onion
  • ground black pepper to taste
  • 6 pieces of egg
  • 2 pieces of poblano pepper
  • 8 pieces of tortillas
  • 1 cup refried beans
  • vegetable oil to taste
  • salt to taste
  • 1 piece of Roma tomato


Finely cut the onion; cut the Roma tomato in small cubes and cut the poblano peppers into thin strips, removing the seed and the white part.

Beat the eggs with pepper and salt in a bowl, with the help of the balloon whisk until sponge.

Heat the oil in the pan and when it is very hot, fry the onion and the poblano pepper slices for 2 or 3 minutes. Add the chopped tomato continue cooking for a few more minutes until the slices are softened.

Add the beaten eggs and cook without stirring too much.

Heat the tortillas, spread some refried beans on each tortilla and fill with the egg. Serve as dinner or breakfast.
