Mexican recipe: Oaxaqueña Sauce With Pasilla Pepper & Green Tomato

A delicious sauce typical of Mexico to accompany your favorite dish (steak or pork).

INGREDIENTS

  • 1/4 cup of water
  • salt to taste
  • 6 pieces of pasilla pepper
  • 8 pieces of green tomato (tomatillo)
  • 2 cloves of garlic

PREPARATION

Devein pasilla peppers. Heat the skins of the peppers over low heat on a frying pan, stirring constantly until they release their aroma, it is important that they do not burn because they are bitter.

Cut the tomatoes in half. Cook the tomatoes in a medium deep pot with a little water for 5 minutes until they change color, remove from the pot immediately.

Place the tomatoes, roasted peppers, garlic, the quarter cup of water and salt in the blender glass. Grind very well until you get a thick sauce. If necessary, add a little more water. Rectify seasoning and go.
