A traditional breakfast in some Mexican homes
- 1/4 piece white onion
- 4 pieces of egg
- vegetable oil to taste
- 3 pieces of tortilla
- salt to taste
Cut the tortillas into strips with the knife on the cutting board. If the tortillas are a bit old or dry it is better. Put the cut tortillas in the microwave for 30 seconds, let cool and see if they have already dried a little, if they need to reheat until they are a little hard. Chop the onion finely.
Put the vegetable oil to heat in the pan. Add the tortillas and put them to brown on low heat. Move frequently so they don’t burn. Once they are crispy, add the chopped onion and brown for two minutes, moving frequently. Add the eggs and let them cook at medium heat a little before stirring. Do not stir too much so that they do not beat. Season with salt to taste.
When cooked, serve immediately accompanied by hot sauce.
